Guide Michelin France 2018

The 2018 France Michelin Guide is already out and, with it, the names of the restaurants that will have this exclusive distinction this year. The ceremony took place in the La Seine Musicale auditorium in Boulogne-Billancourt, near Paris. The ceremony paid homage to Paul Bocuse who passed away on the 21st of January this year.

To sum up, France has gained two three-star restaurants, five two-star restaurants and 47 one-star restaurants. The two new three-star restaurants are La Maison des Bois in Manigold, with chef Marc Veyrat at the helm, and L’Hotel du Castellet, in Le Castellet, belonging to chef Christophe Bacquié.

La Maison des Bois

Chef Marc Veyrat’s restaurant specialises in cuisine using wild plants like grass and flowers. Some of the dishes that stood out during the ceremony were his “forgotten vegetable ravioli” or his “hay eggs”. With this extra star, Veyrat now has now had three restaurants with the triple distinction: “L’Auberge de l’Eridan”, “La Ferme de Mon Père” (now closed) and this year, “La Maison des Bois

L’Hotel du Castellet

The restaurant L’Hotel du Castellet, located on the Côte d’Azur, prepares Mediterranean cuisine where products like octopus, fish, crustaceans and shellfish are chef Christophe Bacquié’s favourite ingredients. The products are so important that he tries to get them from local producers and leave them as little time as possible in the cold-storage room. At the gala, the Michelin Guide’s director praised his “sublime interpretation of garlic mayonnaise”.

The five restaurants to gain their second star were: Au 14 Février (St-Amour-Bellevue), Enfin Flaveur (Nice), Hostellerie Jérôme (La Turbie), Jean Sulpice (Talloires) and Takao Takano (Lyon).
