The youngest of the Roca brothers and master pastry chef, Jordi Roca, is planning to open a chocolate factory in his native city, Girona, where his restaurant El Celler de Can Roca -one of the best restaurants in the world- is also located. The idea is to open a chocolate factory at the end of 2018 where the entire product creation process can be witnessed. This factory will also double as a luxury hotel, thanks to being kitted out with rooms for this purpose.
Tandem with Damian Allsop
The renowned master chocolatier, Damian Allsop, former mentor of Jordi Roca, will be accompanying the youngest of the Roca brothers. Allsop is a regular contributor to El Celler de Can Roca and is a chocolate specialist. He has more than 25 years’ experience in prestigious restaurants and pastry shops. One of his creations is chocolate made from water (CH2Ocolate) instead of butter and cream.
The soon-to-be-opened factory will demonstrate the entire chocolate manufacturing process. Only top-quality cocoa seeds will be used, taking into account their origin and whether they are sustainable and fair trade, among other factors.

Factory and luxury hotel
Jordi Roca’s chocolate factory is located in the heart of Girona, in the square on the edge of the entrance to the historical centre of the city, housing a very well-preserved and highly photogenic Jewish quarter with winding streets that have been tagged the “most romantic in Europe”. It will occupy an emblematic intact building that was used as a hospital-based clinic in the 1940s.
While we do not know if Jordi Roca’s factory will have assistants such as the Oompa-Loompas, one thing we know is it won’t be short of is gastronomical magic.
